He went to university for psychology but the kitchen lured him back, first at a well-loved neighborhood restaurant in Monte San Vito, and more recently in the Philippines, where he’s been slipping zucchini into pasta and frying veal with the fervor of a man making up for lost time.</p><p>At Joel’s Place, he staged a four-course dinner that was half culinary memory, half calling card. The <strong>eggplant parmigiana</strong> came out molten and deeply aromatic, the sort of dish that makes you forgive the cliché of “golden” eggplant because here, it was. <strong>Linguini alla nerano</strong>, with zucchini and provolone, was creamier than you’d expect from vegetables alone, a quiet flex of technique. <strong>Veal rolls with prosciutto and asiago</strong> were braised until even the carrots in the sauce seemed flattered to be there. The<strong> Italy Zone</strong> is where the dream really sprawls: shelves of olive oils from Guglielmi, jars of Sicilian caponata, honeys in so many varieties (acacia, chestnut, coriander, wildflower) you half expect to see a beekeeper wandering the aisles. The pasta wall alone is a geography lesson, running from orecchiette to strangozzi to spaghetti alla chitarra. That depends on whether you think authenticity comes in a jar, or whether it comes from a 29-year-old Italian who still remembers the thrill of cooking for his sister after school.
