<p>Like many Filipinos I know who’ve been to <a href="https://www.instagram.com/crystaljadeph/" rel="noopener noreferrer" target="_blank"><strong>Crystal Jade</strong></a>, my first encounter with this vaunted Singapore-born establishment was many years ago on a visit to the Fragrant Harbour—specifically along the long stretch of businesses in Harbour City. In retrospect, it is brilliantly located, tucked into a corner with tons of foot traffic, which may explain why it was always so incredibly busy. Bustling would be an understatement: it was downright cacophonous with the tinkling of bussed-out plates and cutlery, and the non-stop chatter of clientele deep in conversation. It pretty much replicates the vibe of Crystal Jade in Harbour City all those years ago. Their guiding principle is clear—put solid Chinese dishes on the table with a contemporary twist, aiming for high quality at a price that won’t necessarily break the budget. You see this as soon as you read their menu: there are dishes in the sub-500-peso range, like a rich, thick meat and century egg congee, or shrimp wonton noodles. When we visited, it was indeed bustling, with what looked like office workers mingling with a smattering of ladies who lunch. If that’s the case, they’ve got it right.</p><div><br/></div><p>Navigating through the menu, you’ll find a balanced mix of Cantonese greatest hits, with a few leftfield dishes to keep things interesting. My companion and I thoroughly enjoyed a soothing shredded<strong> seafood and pumpkin soup</strong>—shareable and hefty enough to be a filling one-dish meal if you didn’t mind. Roasts are everywhere in Manila, but Crystal Jade has made it their mission to craft them better than most. A dive into their tantalizing signature <strong>pork belly chashiu</strong>, back-to-back with audibly crispy roasted pork belly, demonstrates their roast skills—and can easily be the star of your meal when paired with hot steamed rice. Feeling indulgent? Order their Lucky 5 crispy chicken—one of the best I’ve tried in recent memory, with a juicy interior and lacquered, crispy skin. Pair that with <strong>organic tofu topped with cai po</strong> (pickled vegetables), and you have a satisfying veg-forward combination. A top-notch sweet and sour pork with a big plate of fried rice (I recommend olive leaf) will make pickier eaters happy as well. Apart from your food, service must be tight and fast, your room cozy enough, and your location smart. Crystal Jade at One Ayala knocks all of this out of the park. Their menu may not be the most comprehensive, but that’s not a drawback.
