They also questioned the transparency of payroll, benefits, and employment records, alleged that management discouraged employees from resigning by invoking the restaurant&#x27;s prestige within the fine-dining industry, and described a workplace culture that made employees feel they should report to work even when ill.</p><p>One former employee described routinely working shifts that stretched from late morning until the early hours of the following day, saying the long hours gradually came to feel normal.</p><p>&quot;I would find myself going in like 12 noon or 11 a.m. I&#x27;d get out of the kitchen at 2 a.m., 3 a.m., sometimes even more. And I do that five days a week. Then I&#x27;d start to question myself: is this normal?&quot;</p><p>The former employee said that even after dinner service ended, staff continued preparing for the next day&#x27;s service, leaving little opportunity to rest.</p><p>&quot;You haven&#x27;t had a proper break. You haven&#x27;t had a proper weekend. You never get a breakdown whenever you get it, so every cutoff we feel like it&#x27;s just a random number.&quot;</p><p>Another former employee, identified only as E, responded:</p><p>&quot;Yeah. It feels like gambling.&quot;</p><p>The two also described what they characterized as a workplace culture that discouraged employees from taking sick leave. One former employee said workers felt they had to report for duty because &quot;nobody can replace you&quot; and because their workload would simply fall on someone else. E added:</p><p>&quot;They build a lot of guilt.&quot;</p><p>The allegations were made publicly in the Bilyonaryo interview and were also reflected in the document shown during the report. While we respect the space for individuals to share their experiences, we wish to clarify that these accounts do not accurately reflect how we operate.&quot;</p><p>Toyo said it has spent more than a decade building &quot;a workplace rooted in fairness, respect, and genuine care&quot; for its employees. It added that many members of its current team have stayed with the restaurant for years, while some have returned after leaving, which it said reflects &quot;the supportive and respectful environment we actively maintain.&quot;</p><p>The restaurant also maintained that it has &quot;always operated in full accordance with the Labor Code of the Philippines and all applicable labor regulations,&quot; saying it has consistently met its obligations on wages, benefits, and employee leave throughout its 10 years of operation.</p><p>Addressing the broader controversy, Toyo said it understands that former and current employees &quot;may have varying experiences&quot; but added that it does not dismiss those concerns lightly and remains open to addressing &quot;legitimate concerns&quot; through the proper channels.</p><p>The restaurant also noted that, prior to the current controversy, &quot;not a single labor case has ever been filed against us, a record we do not take for granted.&quot;</p><div><strong><br/></strong></div><h3><strong>4. Some workers reportedly told inspectors they received overtime pay, were entitled to 20 vacation or sick leave days a year, and had not experienced the &quot;coercive tactics&quot; alleged by former employees.</p><p>The <em>Daily Tribune</em> further reported that an earlier inspection in March found the restaurant did not have payroll records for January and February 2026 available at the time of inspection.</p><p>In its July 9 statement, however, Toyo Eatery said the June 3 inspection concluded with what it described as &quot;full clearance&quot; from DOLE after direct interviews with current employees.
