But one thing is clear: UNDŌ is not Mōdan&#x27;s new permanent home. Instead, it is a separate pop-up concept that offers a different way to experience Chef Jorge Mendez&#x27;s cooking while the restaurant prepares for Modan&#x27;s next chapter.UNDŌ (pronounced &quot;oon-doh&quot;) is a Japanese word meaning &quot;movement,&quot; an apt name for a project that bridges the gap between Modan&#x27;s former Cubao restaurant and its new location, which is expected to open later this year.Under Chef Jorge Mendez, Mōdan established itself as one of Metro Manila&#x27;s defining modern Japanese restaurants. Its Michelin Selected tasting menu combined Japanese technique, Filipino ingredients, and Mendez&#x27;s distinctive point of view.Unlike Mōdan, which will continue its signature tasting-menu format when it reopens, UNDŌ will focus on à la carte dining. It offers diners a more flexible way to experience Chef Mendez&#x27;s cooking before Mōdan returns in its next home.For now, that&#x27;s all the restaurant is saying. More details—including the menu, location, and opening date—are expected soon.
