A Filipino restaurant from Manila has<a href="https://guide.michelin.com/ph/en/singapore-region/singapore/restaurant/hayop" rel="noopener noreferrer" target="_blank"> made the MICHELIN Guide in Singapore twice</a>. If you are going to Singapore, <a href="https://hayopnimanam.com" rel="noopener noreferrer" target="_blank">Hayop</a> gives you a particularly good reason to eat Filipino food there. The Filipino restaurant group, which also owns Manam, 8Cuts, Ooma, and other homegrown brands in the Philippines, also saw <a href="https://guide.michelin.com/ph/en/metro-manila/makati-city_2329358/restaurant/manam-at-the-triangle" rel="noopener noreferrer" target="_blank">Manam at the Triangle receive a MICHELIN Bib Gourmand in the inaugural MICHELIN Guide Philippines in 2025</a>.There is something pleasing in a Filipino restaurant group having MICHELIN-recognized restaurants in both Manila and Singapore. But Hayop is not simply Manam transplanted overseas. It is its own concept, with familiar Filipino dishes alongside food developed specifically for the Singapore restaurant.<div> </div><h3>What to expect at Hayop</h3>If you know Manam, much of the menu will feel familiar. That is part of the pleasure: Hayop brings some of Manam&#x27;s best-known dishes to Singapore, alongside new ones developed for the restaurant.Start with Manam’s House Crispy Sisig, made with pork jowl and cheek and served sizzling. <a href="https://www.straitstimes.com/life/food/best-eats-of-2024-best-restaurant-dish-manams-house-crispy-sisig-from-hayop-ni-manam" rel="noopener noreferrer" target="_blank">The Straits Times named it its best restaurant dish of 2024</a>, before Hayop made its MICHELIN Guide debut the following year.<div><img src="https://od2-image-api.abs-cbn.com/prod/editorImage/1786721344011House Crispy Sisig 2.jpg" style="width:960px" class="fr-fic fr-dib" width="960"/>Manam’s House Crispy Sisig | Photo: Hayop SG</div>Next comes Crispy Palabok, which takes the familiar noodle dish in a crunchier direction: fried glass noodles with shrimp and annatto sauce, cuttlefish, prawns, tinapa, and chicharon.<div><img src="https://od2-image-api.abs-cbn.com/prod/editorImage/1786721360132Palabok.jpg" style="width:960px" class="fr-fic fr-dib" width="960"/>Crispy Palabok | Photo: Hayop SG</div>The dish that The MICHELIN Guide highlights is Manam’s Wagyu and Watermelon Sinigang. Australian Wagyu short rib, charred watermelon, okra, taro, French beans, and baby radish come together in a tamarind-and-watermelon broth. This is best eaten with steamed rice.And yes, there is watermelon in the sinigang. There is Adobong Dilaw, with Duroc pork belly, turmeric, sukang tuba, ginger, calamansi, and roasted bone marrow. Piyanggang Manok comes with burnt coconut and coconut milk. There is Oxtail &amp; Tripe Kare-Kare with peanut and miso, Crab Bicol Express, and Inasal na Panga, made with grilled maguro jaw.<div><img src="https://od2-image-api.abs-cbn.com/prod/editorImage/1786721548012Piyanggang Manok.jpg" style="width:960px" class="fr-fic fr-dib" width="960"/>Piyanggang Manok | Photo: Hayop SG</div>For bigger gatherings, there is Lechon de Leche, a whole slow-roasted suckling pig served with spicy sukang puti and house-made pig-innards sauce. It requires 48 hours’ advance ordering, and is available for dinner from Wednesday to Saturday.<div><img src="https://od2-image-api.abs-cbn.com/prod/editorImage/1786721559290Lechon de Leche.jpg" style="width:960px" class="fr-fic fr-dib" width="960"/>Lechon de Leche | Photo: Hayop SG</div>Make sure to leave room for dessert!The Halo-Halo is made with shaved ice, ube halaya, nata de coco, red beans, palm seeds, macapuno, house-made ube sorbetes, and leche flan. There is also Turon with Filipino vanilla ice cream, Buko Pie, Mais con Hielo, and a Patis Caramel Tart with dark chocolate ganache.<div><img src="https://od2-image-api.abs-cbn.com/prod/editorImage/1786721608952Halo Halo.jpg" style="width:960px" class="fr-fic fr-dib" width="960"/>Halo-Halo | Photo: Hayop SG</div>The cocktails take their cues from Filipino flavors, with the menu organized around Alat, Asim, Tamis, Anghang, Malinamnam, and Pait. The MICHELIN Guide describes them as “Asian-inspired fruity cocktails.”Hayop was conceptualized with Filipinos living abroad in mind: a place for them to reconnect with the flavors of home, while also welcoming diners curious about Filipino cuisine. That Filipino identity is apparent in the dining room, with its wooden screens reminiscent of traditional Filipino homes and pendant lamps inspired by fishing nets. Hayop attracts large, multigenerational Filipino families, as well as couples and office workers looking for a meal.The menu is “both nostalgic and new,” as The Moment Group co-founder Abba Napa puts it. It is the kind of food you might have eaten at home  in the Philippines.
