<p>Once upon a time, when space wasn&rsquo;t such an issue, hotels had grand, show-stopping lobbies. Bustling with activity: businessmen businessing, women chatting over drinks, couples dating, FOH bussing. An extension of the lobby&rsquo;s Lounge, it looks and feels like a little secret, a place where the cool kids or the seasoned traveler get to hang out and grab a martini or two in peace. But for now, it is a pop-up, if you will, for a Japanese chef named <a href="https://www.instagram.com/manilasushichef/" rel="noopener noreferrer" target="_blank"><strong>Yuki Anzai</strong></a>. Chef Yuki is a global culinary warrior, having learned his craft in Tokyo, worked in America, and then here in the Philippines.&nbsp;</p><div><span class="fr-img-caption fr-fic fr-dib" style="width: 960px; display: block;" width="960"><span class="fr-img-wrap"><img src="https://od2-image-api.abs-cbn.com/prod/editorImage/1788235378099Chef Yuki Anzai (12).jpg" style="width: 960px;" class="fr-fic fr-dib" width="960"><span class="fr-inner">Chef Yuki Anzai | Photo: Grand Hyatt Manila</span></span></span></div><p>His specialty? <strong>Edo-style sushi</strong>. During the Edo era of Japan, sushi was primarily a street food (can you imagine getting some sushi from the Tokyo version of a jollijeep??), consumable in a few bites. Nowadays, it is a technique-driven style, prevalent in every bite you take in&mdash;the chef is all about how long to age and cure fish, when its optimal serving window is to obtain the best flavor, how to season the rice, how much rice to use for a piece of nigiri, even what temperature the rice should be.&nbsp;</p><div><span class="fr-img-caption fr-fic fr-dib" style="width: 960px; display: block;" width="960"><span class="fr-img-wrap"><img src="https://od2-image-api.abs-cbn.com/prod/editorImage/1788235537861Edited 2.jpg" style="width: 960px;" class="fr-fic fr-dib" width="960"><span class="fr-inner">Shima Aji (Striped Jack) Nigiri, Black Sesame Macaron, and Crab, Seared Scallop and Uni with Tosazu Jelly | Photo: Grand Hyatt Manila</span></span></span></div><p>It&rsquo;s not as simple as cutting up a piece of raw fish and putting it on rice. There are lots of variables, if you care to go that route. Lucky us, we got to sample what made it so special. The chef brings in all his fish from Toyosu Market in Tokyo, a lot of which isn&rsquo;t usually found on our tables. Of course, it will change seasonally, but let me tell you this&mdash;it certainly is special. All the bites I tried had layers of flavor&mdash;the more you chew, the more nuances and umami you unlock. Sitting here, watching the sushi chefs do their thing while getting to listen to the live music from the lobby is quite a vibe. Oh, I forgot to mention: if you are so inclined, they&rsquo;re also serving Krug by the glass at the best price in town, as well as a variety of sake and ice-cold Japanese beer on tap. Champagne and sushi? Why not!</p><p>There is a lighter omakase course with seven courses at PHP 5,800, while the 10-course omakase is PHP 7,800. The Round Bar only seats 12, and with two seatings a night (6 p.m. and 8:30 p.m.) starting Sept. 9, it is highly recommended to make a reservation.
