LOOK: Tree-To-Bar Chocolates For The True Connoisseur
A cool collab produces magical chocolate bars that celebrate heritage and nostalgia
Some of the best ideas are born when two passionate, creative forces come together to create something new. Collabs are fun, cool and can have very delicious results. One of our favorites this year is this magical collab between Karl and Kay Santos of 1919 Chocolate and Treena Tecson of True Chocolate PH. Bringing together their shared passion and expertise to showcase the history and heritage of heirloom cacao, modern post-harvest and fermentation protocols as well as innovative techniques, they created a new line of crave-worthy Tree-to-Bar chocolates.
1919 Chocolate is an award-winning, family-owned, tree to bar craft chocolate maker. The cacao beans are sourced from their estate farm in Malvar, Batangas which is home to heirloom Criollo cacao trees, some of which are almost 100 years old. 1919 Chocolate recently garnered a second Silver Award for their 62% Dark Chocolate and a first Bronze Award for their 70% Dark Chocolate from the prestigious Academy of Chocolate 2021 (UK) under the Tree-to-Bar category.
True Chocolate PH was established by chocolate maker and certified chocolate taster Treena Tecson to document her passion for chocolate and journey to learn more about the art and science of chocolate making. In 2019, she received her Level 1 & 2 Chocolate Tasting Certification from the International Institute of Chocolate and Cacao Tasting (IICCT). She is currently involved in cacao farming, post-harvest processing and tree-to-bar chocolate making.
The craft chocolate bars created for this collaboration are inspired by familiar and nostalgic flavor combinations reinvented and elevated using quality ingredients such as award-winning chocolate, natural cocoa butter and raw cane sugar.
There are three (3) crave-worthy craft chocolate bars to choose from:
Toasted White Chocolate with Crushed Cacao
Inspired by our favorite cookies and cream combination, this craft chocolate is made using natural cocoa butter, caramelized milk powder blended with crushed fermented and roasted cacao nibs. When white chocolate is toasted, it creates a unique flavor profile with notes of caramel and dulce de leche complemented by the crunchy texture and roasted flavor of the cacao nibs.
Hazelnut Milk Chocolate
Our version of this popular hazelnut milk chocolate is made with single-estate heirloom cacao, natural cocoa butter and milk powder combined with roasted and salted hazelnuts which results in the distinctly familiar nutty chocolate taste.
Dark Chocolate Biscuit
Inspired by chocolate covered biscuits, our version is made with award-winning 70% dark chocolate combined with whole wheat biscuits to provide a crunchy contrast that complements the smooth and decadent dark chocolate.
