59C now offers brunch by Feliz on weekends
The creative duo behind catering/takeaway brand Feliz, Chef Trish Cheung and Christine Locsin bring their spunky charisma and talents to life at 59C. Situated in buzzing Makati City, 59C is the brainchild of Chef Trish and her husband John Paul Cheung while on their honeymoon in Amsterdam. Observing coffee shops that provided a space for co-working, the newlyweds were inspired to bring this concept back to Manila.

Since opening in 2016, 59C has evolved to become a quiet “Co-work” space from 9 am to 6 pm, which then converts to “Merry Time” from 6 pm to 1 am. And now, they’ve added weekend brunch to the mix.
Guests can now look forward to a brunch hour packed with all the guilty pleasures we look for, especially on a casual weekend. “Christine and I wanted to tap the local neighborhoods like Bel Air and Urdaneta Villages. I want mothers and families to come and eat here or grab a take out. We also now have a potluck menu for people to order in advance,” Chef Trish shares. Not only can you eat in or take out your orders, but you can also hold events at 59C, where Chef Trish can customize a menu to your liking, and Christine handles all your styling and decor needs.

1. Make breakfast for Mom with this sumptuous Spanish Egg Surprise from Chef Trish!
The Spanish Bread Egg Surprise is a flawless harmony of sweet and savory that will leave you more than satisfied. Homemade bacon cooked to a crisp sandwiched between fresh Spanish bread is topped with Chef Trish’s signature hollandaise and torched cheese. An unconventional take on Eggs Benedict—using Chef Trish’s favorite Spanish bread for added richness—this is a dish you never knew you needed. We’ve been craving it since.
Spanish Bread Egg Surprise
Serves 4
4 pieces Spanish bread
butter
8 bacon strips
4 fried eggs
100 grams grated Gouda cheese
1. Deep fry bacon strips until crispy. Set aside and let cool.
2. Cut Spanish bread in half. Heat in butter in a non-stick pan to get a crunchy texture on the inside.
3. Place the heated Spanish bread on a plate. Add crispy bacon inside, then top with a fried egg.
4. Spoon hollandaise sauce (recipe below) over the sandwich. Add grated cheese, and torch or place under the broiler until cheese melts. Garnish with herbs or edible flowers.

Hollandaise Sauce:
4 egg yolks
1 teaspoon lemon juice
1/2 cup unsalted butter, melted
pinch of cayenne pepper
pinch of salt
1. In a stainless-steel bowl, whisk egg yolks and slowly add lemon juice until mixture thickens and doubles in volume.
2. Place the bowl over a saucepan containing simmering water (double boiler), but don’t let the bowl touch the water in the pan. Continue to whisk rapidly. Be careful not to let the eggs get too hot or they will scramble.
3. Slowly pour mixture over the melted butter and continue to whisk until the volume doubles. Remove from heat and season with cayenne and salt.
