For the mains, you’ll have Beef Tenderloin a la Florentine with Spinach and Wild Mushroom Creme, 6-Hour Braised Lamb Shank in Fresh Tomato-Wine sauce with Hints of Rosemary and Thyme, Mediterranean Salmon Fillet with Capers, Lemon and Brown Butter, and Garlic-Herb Buttered Fettuccine with Grana Padano Crumble! Chef Sau del Rosario’s Chicken Galantina is as festive as it is delicious. It’s the complete meal package so you won’t have to go through the trouble of making this classic Pinoy show-stopper. It’s a boneless chicken stuffed with meat, vegetables, raisins, and cheese (yes, cheese!) and goes well with their mashed potatoes (or let’s face it — rice). Spending the weekend with loved ones is always a good idea, especially when you get to share a hearty meal prepared by one of the purveyors of Filipino-Chinese culinary heritage, Linda Co a.k.a.
