When it comes to pancit, Manam likes to go two ways—classic and with a twist. On the classic side, the Pancit Canton Special features canton and sotanghon noodles served with pork, tofu, and vegetables. Pancit Palabok boasts a rich, savory shrimp sauce in its signature orange color, topped with housemade chicharon, garlic, spring onions, fresh shrimp, and squid.

On the “twist” side, the Pancit Palabok comes in a crispy version, with crunchy glass noodles instead. The Lechong Batchoy goes overboard with the meat—lechon in oxtail broth, lechon strips, liver pâté, pork floss, and chicharon over miki noodles. But among Manam’s pancits, not to be missed has to be the Pancit Sisig, featuring Manam’s famous House Crispy Sisig made with pork jowl and cheek. Just mix the crispy sisig with its creamy sisig sauce, then pour on top of pancit canton, for an extra rich pancit indulgence.
