Reservations In Paradise Comes To Shangri-La Mactan

The highly acclaimed food and wine weekend marks the resort’s 30th anniversary

Returning after a three-year hiatus due to the pandemic, the revered Reservations in Paradise event took place in Shangri-La Mactan, Cebu to commemorate their 30th year in the industry. In partnership with Bacchus International, the luxury resort hosted discerning food and wine connoisseurs as well as valued patrons in an iconic three-day gastronomic sojourn featuring fine wines, splendid fare and leisure experiences.

Premium wines from Louis Jadot, Port Blends by Graham, Chateau d’Yquem and Cheval Blanc complemented the exquisite cuisines curated by Shangri-La chefs from all over the country headed by Mactan’s very own Executive Chef, William Tan. Joining the roster of acclaimed chefs are Mactan’s Executive Chinese Chef Liu Zhijun, Italian Chef Luca D’Amora, Chef de Cuisine Marvin Ampoloquio, Shangri-La Edsa Manila’s Dim Sum Chef Andy Liew and Shangri-La The Fort’s Pastry Chef Myles Sanchez.

An Asian Flair Beachside Dinner featuring Louis Jadot Burgundy Wines 

The weekend itinerary began with a cocktail and beachside dinner featuring the wines of Louis Jadot. Fire dancers welcomed the excited guests as they readied themselves for a showcase of talent with live grilling stations and outstanding service. 


Sight, sound and sensation — The Asian Flair Dinner was a feast for the senses as the chefs served their first course, the smoked tuna sashimi, paired with the Couvent des Jacobins Blanc 2020. Live grillers, sous vide octopus, cuttle fish, mussels and the charred Wagyu tomahawk were also presented alongside world-renowned wines, Chablis Premier Cru Fourchaume 2018, Savigny-lès-Beaune Premier Cru Des Guettes Rouge 2017 and Clos Vougeout Grand Cru 2013. To cap off a sweet night, Chef Myles introduced a delightful gush of chocolate and berry flavors using Asian herbs and spices, in an eagerly awaited dessert show.

The Global Brunch featuring Port Blends by Graham 

Sunshine peaked through the draperies amid palm trees, as like-minded individuals gathered for a decadent Global Brunch Affair featuring contemporary cocktail mixes from Port Blends by Graham. Guests indulged in the fruity flavors of the much-admired Port Blends paired well with equally fine international food selections like pizza al trancio, frittatina di pasta, burrata capponata, Wagyu beef belly, seafood laksa kuih pie tee, sheng jian bao, pinchos morunos, spicy lamb bulogi, Cebuano lechon, kinilaw, danggit, croiffles and more.

Dinner by the Chefs featuring the Wines of Chateau d’Yquem and Cheval Blanc 

Concluding the luxe weekend was an elegant Dinner by the Chefs at Acqua, Shangri-La Mactan Cebu’s Italian restaurant. The al fresco setting was beautifully adorned with floral trimmings and ambient lighting, all of which suited the Italian Chinese fare served with wines from Chateau d’Yquem and Cheval Blanc. Dinner began with amuse bouche of natural oyster and scallop truffle dumpling by Chef Luca and Chef Andy followed by seafood and meat courses like lobster carpaccio by Chef Liu and braised 5-spice osso bucco By Chef William. Dinner ended on a sweet note with Chef Myles and Chef Garry’s lemon ginger tart, meringue and tropical fruit macedonia paired with the vintage Chateau d’Yquem 1990.
