Verbena In Discovery Country Suites Tagaytay Launches Its New Menu

Chef Jay Jay Sycip is out to spice up the Verbena menu at Discovery Country Suites Tagaytay. While he won’t stray too far from the casual, but refined, comfort food the eatery at this highly regarded bed and breakfast on the Tagaytay Ridge has been known for for over a decade now; we can expect greater variety, broader use of quality ingredients, plus the maintaining of a price point that offers true value for money.

Essential to the vision Chef Jay Jay has for Verbena is the concept of sustainability, with a good cross-section of the restaurant’s organic and fresh produce sourced directly from partner farms in Tagaytay. The Thai Roast Beef Salad and the Kale Salad with Walnuts are prime examples of how he’s achieving this. The Thai Roast Beef Salad is of particular note; as in 2014, Jay Jay spent a year at Le Cordon Bleu Dusit Culinary School in Bangkok.

At the sampling of the new menu I attended, there was good news for Seafood lovers—the Fillet of Barramundi is to die for, and the Fish & Chips is created with substantial morsels of fish, unlike other iterations where the breading dominates the offering. For the carnivores, the Roast Pork is a new entree worth its weight in gold; and Jay Jay resurrects that old favorite, Wine Braised Beef.

For the month of October, there’s a Tapas promotion that one can enjoy on the terrace. Potatoes & Chorizo, Jalapeño & Corn Croquettes, and the Octopus in Vinegar  are the tapas dishes to select from. 

Hearty breakfasts have been the staples of Verbena since it opened, and there are now little tweaks and additions to the Breakfast fare. They make their own Bangers (homemade sausages), a breakfast Quiche Lorraine that’s flatter than how we normally expect it to be, and Waffle Sandwiches that really hit the spot—there’s a BLT version, and a Chicken Mayo.

And leave ample room for dessert; the Walnut Pie, a Chocolate Orange Tart (my favorite), and Classic Chocolate Cake, are the new additions.

To be frank, Verbena has always enjoyed a lofty reputation as one of the places to dine while in Tagaytay. Open from 7:30am to 9:30pm; so it’s great to report that the standard maintains its high, and Chef Jay Jay adds a new dimension. As for me, given how he spent a year in Bangkok, I’m waiting for him to really spice things up one of these days with a Thai feast!
