This Is The Perfect Treat To A Sans Rival-loving Mom

When asked about the humble beginnings of their business, Kris Alcantara Mendoza shares this heartwarming tidbit,
“Ever since I was little, my lolo would make sans rival for our family. It was a big part of our family tradition—it was our go-to cake for every occasion and no occasion. My lolo, who was not a baker, developed this recipe in the 60s, tweaking and fine-tuning it until it was exactly how we all liked it: not too sweet, generously laden with toasted cashews, and above all else, makunat! This recipe has been with our family for about 50+ years now, and it became the gold standard for sans rival.
“When lolo died in 2010, we missed his sans rival so much. And while there were a lot of sans rival cakes available commercially, we couldn't find one we liked as much as the one he made, so the only solution was to recreate it.
“So in 2016, after a lot of prodding from my husband, together we attempted to create lolo's sans rival from scratch using the old handwritten recipe he left behind (and even using his decades-old Kitchen Aid mixer). It was a grueling 6 months of trying to decode the recipe, figuring out best practices, of burnt meringue and melted buttercream... in short doing a lot of things wrong until we finally got it right. And so we named the business after him, Cipriano.”
What was first started by the owner’s lolo is now a part of everyday for Kris. She doesn’t have a roster of staff to bake cakes all day for her, so she lovingly does it herself in the kitchen of her humble home, with the occasional help of Cholo (her husband) and a trusty manang.

Visit their Instagram account ciprianosansrival to order. The cake is sold in two sizes, the 7in at P600 and the 9in at P900. Pick up is at 39 Firefly Road, Valle Verde 6, Pasig City. Delivery option also available for a fee. Order at least 2 days before needed, but they have several cakes available everyday on a first come first serve basis.
