Here’s How To Make Your Own Healthy Granola Using 100% Local, Organic Adlai Grains
Bet you didn’t know you can make granola from any grain, even coconut chips! The only reason every recipe calls for oats is because the West grows it as a staple. But in Asia, we can use locally grown ingredients like rice or coconut chips. That’s why we’re going to base this recipe on adlai.
Adlai is an heirloom grain that’s organic, packed with fiber, with extra protein and also B vitamins. It’s grown by indigenous communities in Mindanao and is now available commercially in specialty health stores like Real Food.
Enjoy this recipe for Adlai Granola as a power breakfast over a glass of dairy-free milk or a smoothie, or munch on as is, as a healthy snack.
1 cup adlai grains
1 cup any nuts and seeds (like 1/4 cup each raw cashews, raw pili, raw sunflower seeds)
yacon syrup or coconut nectar, as sweetener
superfood powder like moringga powder, pitaya or dragon fruit powder, cacao powder
virgin coconut oil
natural flavoring like vanilla extract, cinnamon, or nutmeg
1 cup any dried fruit (like 1/4 cup each dried papaya, dried mangoes, dried pineapple)
cacao nibs, optional
1. To prepare adlai, steep it in 1 cup warm water, covered in the chiller for 24 hours. This will not only activate the super grain, but will allow it to bake faster. You can boil the adlai for an extra 15 minutes in medium heat to soften it some more prior to baking if you like less brittle in your grain.
2. Sprout nuts and seeds overnight by steeping them in warm water then draining them before roasting or dehydrating. This removes phytic acid which are enzyme inhibitors. Most people who are intolerant to nuts and seeds digest them well when sprouted.
3. Preheat oven to 150°C.
4. Mix yacon syrup or coconut nectar and chosen superfood powder with sprouted adlai. Make sure adlai is coated evenly with the sweetener and superfood.
5. Spread out on a baking dish lined with parchment paper and start tossing nuts and seeds (in this case, sunflower seeds).
6. Drizzle coconut oil evenly and garnish with some sea salt and 1 teaspoon vanilla extract or other natural flavoring.
7. Bake for 20 minutes, then remove the tray and turn over the grains, nuts, and seeds. Put back in the oven for another 10 to 15 minutes for even doneness.
8. When evenly baked, transfer to a bowl and add the dried fruits and cacao nibs, if using. Let cool.
