Chef-Mom Rosebud Benitez Shares Her Healthy Asian-Style Dishes That Can Be Cooked In A Matter Of Minutes
Chef and mom Rosebud Benitez has always been known for promoting healthy and family-friendly recipes that can be prepared with a minimum of fuss—her benchmark often being that the food preparation and cooking shouldn’t take over your time in the kitchen. Given that, she was the perfect fit during the Healthy Cooking with Tefal event recently held at SM Makati. Chef Rosebud demonstrated how healthy, home-cooked meals could be tasty, provide the right balance of nutrients, and still be handled with brevity and ease.

The hero recipe that afternoon had to be her Chicken Adobo with Lemongrass—this very traditional Filipino dish given a slight twist taste-wise with the addition of fish sauce, chili garlic sauce, and lemongrass stalks. It came off as wonderfully familiar, yet different.
The Brown Rice Veggie Stir-Fry was an ingenious combination of carbs and vegetables. Zucchini, cabbage, button mushrooms, tomato, spring onion, and carrot were weaved into the recipe, and the garnishing of chopped peanuts added texture to this essentially brown rice dish. I loved this one and couldn’t wait to have cook try the recipe at home.
Chef Rosebud’s Asian Noodles deceptively used regular spaghetti, but had an Asian flavor thanks to the use of oyster sauce, chili paste, and soy sauce. Rather than have it swimming in broth, the mix of veggies and shrimp allowed the dish a new take on Pancit Canton. She availed of Lee Kum Kee sauces and condiments for all these recipes.

Chicken Adobo with Lemongrass
250 grams chicken breast
3 tablespoons canola oil
3 tablespoons fish sauce
10 garlic cloves, minced
3 tablespoons soy sauce
1 and 1/2 lime, juiced
black peppercorns, crushed
1 cup chicken stock
3 to 4 lemongrass stalks, pounded
1/2 tablespoon chili garlic sauce
1. Using a shallow pan, heat oil. Add chicken pieces. Sear both sides. Add the fish sauce and the garlic.
2. Add the soy sauce and lime juice.
3. Season with crushed black peppercorns.
4. Add the chicken stock and the lemongrass.
5. Add the chili garlic sauce.
6. Garnish with basil leaves. Serve immediately.
Brown Rice Veggie Stir-Fry
2 tablespoons water
2 tablespoons soy sauce
1 tablespoon oil
1 cup sliced zucchini
1 cup shredded cabbage
1/2 cup sliced button mushrooms
1/4 cup chopped spring onion
1 cup cooked brown rice
1/4 cup diced fresh tomato
1/4 cup grated carrot
salt and pepper, to taste
2 tablespoons chopped peanuts
1. In a wok pan, combine the water, soy sauce, and oil. Add the zucchini, cabbage, mushrooms, and spring onion. Stir-fry for a few minutes until crisp-tender.
2. Add the rice, tomato, and carrot. Stir-fry for 2 to 3 minutes or until heated through. Season with salt and pepper to taste. Sprinkle with peanuts.
3. Garnish with parsley. Serve immediately.
