3 Mug Brownie Recipes To Enjoy In This Cozy Weather

Enjoying the chill in the air from the recent weather? Here’s a neat and speedy way to enjoy some indulgence while you’re all cozy indoors.  Go ahead and whip up for yourself a mug brownie using just your microwave. These instant desserts are cute, kind of a cross between regular brownies, a cake, and a soufflé.

 

 

We've selected and adapted three simple recipes; a regular Pinoy tsokolate one, a gluten-free one, and a mint-chocolate version. Once they’ve come out, enjoy them while they’re warm, don’t let them get cold! For added decadence, have your mug brownie with a scoop of ice cream, as suggested by baking kit group @bakedincakes in the UK.

2-Minute Pinoy Tsokolate Mug Brownie  

(recipe adapted from Sorted

 

  • 3 1/2 tablespoons tablea chocolate
  • 1/2 cup + 1 tablespoon light brown sugar
  • 2 tablespoons + 1 teaspoon salted butter
  • 1 small egg
  • 2 teaspoons cocoa powder 
  • 1/4 cup all-purpose flour
  • 1 small handful pinipig
     

Melt tablea chocolate with sugar and butter for less than a minute in the microwave. Remove, let it cool, then crack in the egg and stir, followed by the cocoa powder and flour, beating together. Combine completely in mug and return to microwave on 2 minutes at full power. Stir in the pinipig before enjoying.

 

Mint Choc Mug Brownies A La Minute 

(recipe adapted from McCormick) 

 

  • 3 tablespoons semi-sweet chocolate chips or mint chocolate chips
  • 1 tablespoon butter
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons flour
  • 1 egg yolk
  • 1 teaspoon coffee liquid
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon peppermint extract 

Melt semi-sweet chocolate chips and butter in microwave for 30 seconds. Add the remaining ingredients at room temperature and mix well to combine. Microwave for 1 minute. Let it rest for 5 minutes before serving.

 

Gluten-Free Mug Brownies 

(recipe adapted from Babble)

 

  • 1/4 cup gluten-free oat flour, quinoa flour, or any gluten-free flour blend
  • 2 tablespoons unsweetened cocoa powder
  • semi-sweet chocolate chips
  • pinch of salt
  • 1/4 cup maple syrup or honey
  • 2 tablespoons coconut oil
  • 2 tablespoons milk

Mix dry ingredients together until fully combined, then add the wet ingredients and mix until a paste forms. Pour into your mug and microwave for 1 minute, checking if it's soft on top.
