Go Deliciously Carb-Free With This Spicy Chicken Recipe—No White Rice Needed
It seems that every other person we know is cutting back on their carbohydrates. Whether you’re following the keto, Paleo, or South Beach diet—rice, bread, pasta are deemed the weight gain culprits, no matter how much we love these carbs. For those looking for more ways to banish (or at least lessen) the carbs in their diets, we’ve got a delightfully spicy dish that’s easy to cook, and won’t make you miss your rice or noodles. If you’re in a hurry, you can use leftover chicken you have in the fridge—even chicken adobo will work. You can also substitute the chicken with ground pork, shrimp, or fish, if you prefer.
Spicy Chicken in Lettuce Cups
Serves 4 to 6
1/2 cup mayonnaise
2 teaspoons chili garlic sauce
1 teaspoon sesame oil
2 cups shredded roasted chicken
2 tablespoons chopped green onions
salt and pepper, to taste
iceberg lettuce, leaves separated
avocado slices, optional
lime wedges
1. Combine mayonnaise, chili garlic sauce, and sesame oil. Mix well to combine.
2. Add chicken and green onions. Season with salt and pepper. Continue stirring.
3. Spoon chicken mixture into lettuce cups.
4. Top with avocado slices. Garnish with lime wedges.
