Warm Vanilla Bean Soufflé

This light and airy bit of bliss is really easy to make

This warm soufflé is the most blissful piece of edible comfort you will ever encounter. The fluffy, mousse-like texture, the simple yet sophisticated flavor of vanilla, the way it melts in your mouth. You can already taste it, can't you?

Warm Vanilla Bean Soufflé

Serves 6

1/4 cup sugar

1/2 teaspoon salt

1 cup full cream milk

1 vanilla bean, split

3 tablespoons butter

1/4 cup bread flour

5 egg yolks

6 egg whites

2 tablespoons sugar

1. Preheat oven to 375°F.

2. In a saucepan, combine sugar and salt and add to the milk. Add vanilla bean. Bring mixture to a boil. Remove vanilla bean.

3. In another saucepan, melt butter. Stir in flour to make a roux or thickener.

4. Add hot milk to the roux and stir constantly on low heat until very thick. Remove from heat. Add egg yolks and stir until well blended.

5. For the meringue, place egg whites in an electric mixer with whisk attachment. Beat egg whites on high speed. When frothy, add sugar. Beat until stiff.

6. Fold vanilla milk mixture into the meringue. Place in ramekins, leveled until the rim.

7. Bake right away in the preheated oven for 40 minutes. Serve immediately with a side of chocolate sauce or any fruit sauce of choice.
