It’s been an eventful few months for the iconic Filipino restaurant. Last March, it was crowned The Best Restaurant in the Philippines 2023, by the Asia’s 50 Best Restaurant Awards. The same body honored Toyo Eatery with the Flor de Caña Sustainable Restaurant Award 2023 for its “efforts to minimize its carbon footprint and source its ingredients locally, and contributions to the cultural heritage of the Philippines, which it helps to preserve through fostering relationships with local farmers and artisans. The restaurant removed beef from its menus in 2022.”

In an interview for 50 Best Restaurants, chef-owner Jordy Navarra talks about his commitment to sustainability, especially in ingredient sourcing and minimizing waste. He sees the use of heritage ingredients as a unique way to sustain and support cultural and sustainable practices. “Working with traditional artisans allows us to tell their stories, highlighting the country’s vast and diverse heritage and the sustainable practices that come with it.”

The recent restaurant renovation provides space and infrastructure for the team at Toyo Eatery to do even more R&D, as well as practice sustainable techniques that take up room — like composting and recycling. And because Toyo Eatery is not known for resting on its laurels, there’s a brand new Kamayan menu available starting July 1.
