Instead of ham, Brunch Bureau has beautifully caramelized house-made tocino (tender, slightly salty, and not too sweet) on a bed of sautéed spinach over moist and butter-toasted banana bread. BANANA BREAD! We know it sounds like madness, but one bite and it will all make sense. To top it off, it’s crowned with poached egg and torched dalandan hollandaise and served with spicy truffle honey on the side. Make sure to get a bite with every component in it.
