This passion led them to introduce the concept of boozy brunch, complete with cocktails. The inspiration behind the branding, featuring Mimosa glasses as the logo, was rooted in creating a memorable experience for customers.

The partnership with Seven Seeds Australia, renowned for its exceptional coffee, began with a serendipitous encounter during the couple's visit to Melbourne in 2018. Lorraine shared, 'We stumbled upon Seven Seeds during that trip, and we were really impressed by it. We thought of bringing it here and sharing it with everyone because what we learned from the previous coffee shop experience is that most Filipinos really love the chocolatey kind of coffee.'

As for the food, culinary consultant RJ Ungco and his team crafted a comforting and satisfying menu full of the familiar and the delightfully absurd, taking inspiration from “global brunch scenes”. While the concept of brunch is familiar, their flavors and presentation are definitely anything but average.

Brunch Bureau Benedict
Putting this first in the list because it definitely left a mark on this writer. Instead of ham, Brunch Bureau has beautifully caramelized house-made tocino (tender, slightly salty, and not too sweet) on a bed of sautéed spinach over moist and butter-toasted banana bread. BANANA BREAD! We know it sounds like madness, but one bite and it will all make sense. To top it off, it’s crowned with poached egg and torched dalandan hollandaise and served with spicy truffle honey on the side. Make sure to get a bite with every component in it. It sounds overwhelming since it has a gazillion elements, but trust us on this, you’ll never see eggs benedict the same way ever again.

Grilled Cheese Sandwich and Tomato Cappuccino
This is a nice twist to level up a comfort dish without taking away its soul. The grilled cheese sandwich has a nicely browned exterior with a gooey center filled with a mix of mozzarella, cheddar, emmental, cream cheese, and parmesan. Their tomato soup is light and warm with a frothy top, hence the term ‘cappuccino’. Together, these two make an unbeatable combo.

Brunch Bureau also has a “Build Yo’ Own Brunch” option where diners can pick their mains and have it with garlic fried rice, eggs of your choice, mains, and a drink. They have five options for the mains, but we highlight recommend the Loco Moco and Chicken Krapow.

Loco Moco
When have you ever seen this classic Hawaiian dish on a brunch menu? At Brunch Bureau, their take is a balance of traditional and innovative. The hefty beef patty has a nice sear before being smothered in their hayashi mushroom gravy (would gladly eat just this gravy with rice) and topped with caramelized onions, more sautéed mushrooms, and French beans and seasonal fruit macedoine on the side.

Chicken Krapow
This is another delightfully unusual fine on a brunch menu. This robust Thai-inspired dish has generous amounts of chicken chunks stir fried with French beans, Thai basil, and chopped red chili. To balance the heat, it’s also served with their complimentary fruit macedoine. Make sure to get this with soft-boiled eggs or Asian-style fried eggs (crispy edges with runny yolk) to get the most out of your krapow.

Aside from brunch items, Brunch Bureau also has wines and wine pairings (this left me intrigued and looking forward to my next visit), Brunch Bureau twists (coffee-based beverages), lattes from around the world, kombucha, and even brunch and craft cocktails. After all, what is brunch without a mimosa or two?
