The risotto is smooth and flavorful, thanks to the huancaina sauce and Parmesan. This piece of charcoal-grilled Indonesian black cod is wonderfully flakey yet still moist. It’s topped with chopped red onions, chili, cilantro, and shiso leaves with red wine vinegar, sesame oil, and lemon to add even more freshness to the dish.
