Now until October 15, Marco Polo Ortigas Manila’s Cucina celebrates the vibrant taste and sensual aromas of Turkish cuisine. Guets chef Gürsel Keles flew in from Istanbul to prepare the true flavors of his hometown. Currently the chairman of the Eurasian Chefs Association, Chef Gürsel has organized food festivals in Turkey, Germany, Lebanon, and Belgium, to name a few. He also runs his seafood restaurant Fish of North in Istanbul.
On Chef Gürsel’s menu for Cucina are appetizers like Circassian Chicken Salad and hot-off-the-grill chicken, lamb, red snapper, and eggplant skewers. His signature dishes include Steamed Sea Bass in Paper with Vegetables and Herbs (Kagritta Levrek), Pan-Roasted Lamb with Smoked Eggplant Purée (Hunkar Begendi), and Spiced Chicken with Olive Coriander Relish. For dessert, he makes the sweet Turkish staple of Pistachio Baklava (Ore Baklava), as well as Candied Pumpkin with Walnuts (Kabak Tatlisi), and Fried Dough Balls in Rose Scented Syrup (Lokma).
