In its first ever collaboration dinner since its founding in 2000, premier steakhouse 22 Prime at Discovery Suites is set to bring back the glory days of classic steakhouses with a Southeast Asian twist.




The 7-course benefit dinner, entitled “East Meets Grill”, will bring together celebrity chef and author Sharwin Tee and Discovery Suites executive chef Gerwin Bailon. It’s not just a celebration of culinary innovation, but also a gesture of generosity. A portion of the event's proceeds will go to the Aeta communities in Capas, Tarlac, through the Aeta Ako, Pilipino Ako Foundation Inc. Tee's commitment to giving back to the community adds a heartfelt dimension to this gastronomic affair. It’s the most delicious way to help out and give back to those in need.

Together, the two chefs are orchestrating a two-night dining event that beautifully marries the robust flavors of an '80s steakhouse with the familiar yet diverse tastes of Southeast Asia.


The spotlight of this culinary collaboration falls brightly on Chef Sharwin Tee, whose expertise and creative genius usually focuses on Chinoy (Filipino-Chinese) persuasions. His approach blends traditional flavors and contemporary techniques to redefine beloved dishes.


"Elevating Southeast Asian flavors to new heights is a passion of mine," says Chef Sharwin. "This collaboration with Chef Gerwin allows us to bring these vibrant tastes to the forefront in a way that tantalizes the taste buds and ignites the senses."

The two chefs meticulously crafted a 7-course menu that started with a duo of delectable bites: Chopped Salad on Parmesan Tartlet with Rojak Sauce and satay-inspired Seared Tuna with Peanut Sauce.

The appetizer is a play on that steakhouse classic, the shrimp cocktail, but nothing like your parents used to have. You’re served with two large prawns (steamed, of course) with Chili Crab Granita inspired by Singapore Chili Crab Sauce. On the side, a “fried egg sauce” that adds creaminess to the dish. On top, a crunchy bubbly tapioca crisp that adds texture in every bite.

For the soup course, the chefs created a classic consommé with the hearty flavors Bah Kut Teh. In the center, Chef Gerwin made a medallion of house-made pork terrine with tiny cubes of pickled chayote — a sweet-tangy bite within a savory broth.

The fish course was Grilled Mahi-Mahi, a steakhouse favorite, but flavored and presented with inspirations from Singaporean hawkers. The  fish was marinated like otak-otak and topped with Sambal Belacan Hollandaise. Underneath the hefty piece of meaty fish was coconut-infused black rice.

And what is a visit to one of the best steakhouses in the metro without a taste of their famed steak? For the meat course, the chefs created a Crying Tiger Steak: a generous piece of USDA Rib Eye with Daging Harimau Menangis Marinade, deviating from the usual salt-and-pepper-only approach of 22 Prime. The beyond-tender beef is topped with a cherry tomatoes and onion salad, brightening the dish with its fresh flavors. On the side, creamy gratin potatoes and Singapore laksa sauce for added spice.

The meal ends with another classic, Baked Alaska. But instead of Neapolitan ice cream, here you’ll find layers of red bean ice cream, salted coconut ice cream, and pandan ice cream encased in sweet and fluffy Italian meringue before it’s torched for that perfect gooey, smokey finish.
