Half Saints Has The Prettiest, Limited-Time Pastries
Here's how to get your hands on 'em!
Christine Roque and Jo Arciaga of Half Saints seem to have finally come full circle. On their first corporate partnership, the two chefs teamed up with culinary giant KitchenAid to highlight the brand’s stand mixers and their restaurant's forte: baking amazing pastries.
“We feel quite sentimental about this [collaboration],” Chef Christine wrote on Half Saint’s social media.
She continues, “The KitchenAid mixers we use at Half Saints are the same mixers gifted to us by our moms over ten years ago. To us, KitchenAid is more than just a kitchen tool. It brought out the creativity and determination in our younger selves—something that has carried us over now that we have a restaurant of our own.”
For their collaboration, they decided to pay tribute to KitchenAid Artisan Stan Mixers by creating a French-inspired tart “mixed with the playfulness of Half Saints”.
The Ruby Chocolate Pistachio Tart, inspired by the Guava Glaze (pink) color of the stand mixer, is a delicious treat as much as it is an engineering marvel. The pâte sucrée (pastry crust) is flavored with lemon zest, then there’s a layer of almond frangipane with pistachio, a layer of pistachio praline (pistachio ground into a paste with caramel), then a generous layer of delicately piped ruby chocolate crémeux (brightened further by the lemon zest). The dessert is made even more romantic with the addition of dried rose petals and dusting of edible gold. Though it may sound like quite a mouthful, the Ruby Chocolate Pistachio Tart is light, not too sweet, and dare I say even fluffy.
Chef Christine says this confection is part of her top three Half Saints creations together with the iconic Crema de Fruta and the decadent Merci Buko Cream Puff.
Another reason to love Half Saints is the Manila store’s version of their Tokyo signature offer: the Asturias Blue Cheese Cloud Cookie. Best enjoyed with a glass of Malbec wine, the Cloud Cookie is exactly as it sounds. It may look dense, but we know looks can be deceiving. Every bite of this cookie-cake hybrid is light and delightfully crumbly. The Asturias blue cheese from Spain is present but not overwhelming. The cookie is sweet, slightly salty, and rich. The wine makes sense, trust us.
