Tucked in a little corner of the Sapphire Bloc in Pasig is a hidden gem of a restaurant that opened late last year. It’s name is Elevate and it’s mission, if you can call it that, is to serve elevated, superbly executed comfort food. The kind of dishes you’d have loved to order when out on a fancy date, but feel aren’t special enough. Well, the chefs at Elevate takes those dishes, spiffs them up until they’re fit to serve to VIPs. And you.

The place itself is modern industrial, with all the great lighting and the requisite Instagram-worthy corners so you can take your time happily shooting your food. But I wouldn’t do that for too long, the dishes always taste best fresh from the kitchen, at their best temperature.

The menu is spare but well designed, with classic dishes that are taken up a notch. Like the curried pumpkin soup made with curried pumpkin purée, coconut milk, pumpkin seeds, goji berries, garnished with curry leaves and basil. We had this with assorted pintxos and potato croquettes with mozzarella, bonito flakes, takoyaki sauce, Japanese mayo and furikake.
The menu is spare but well designed, with classic dishes that are taken up a notch. The bar chow is excellent. Think Korean Sweet Chili Wings with sweet chili glaze and a garlic aioli dip, Sisig Nachos with jalapeños, cheese and ailoi; and Pulled Beef Tacos made with pita bread, not tacos, and aioli.

There’s good pastas and risotto, too. Green Curry Pasta is interesting with Thai green curries, eggplant, straw mushroom, chicken and coconut milk. And there’s a Garden Spinach Risotto made with arborio, asparagus, edamame, sundried tomatoes, Parmesan and rice chips.

We loved the mains. Slow Roasted Beef Belly with mashed potatoes and barbecue beef jus. A Panfried Salmon with herb crust, mushrooms, roasted potatoes and garlic sauce. And steak! The Angus Rib Eye is very reasonably priced and hard to resist with mixed greens and beef jus.

Don’t skip dessert. There’s Ube Medley: a pastillas, halaya, and ube ice cream. And Black Sesame sponge cake with chocolate crumble, strawberry sauce and vanilla ice cream. Personally, this last was my favorite.
