Drawing inspiration from the raw, powerful imagery of its namesake, Anvil is a pop-up at The Balmori Suites' Chef’s Table running from September 12 to October 13, 2024, celebrating the essence of simplicity and innovation.

Boutwood's vision for Anvil is influenced by his British roots and fascination with blacksmith craftsmanship. Just as a blacksmith forges metal, Boutwood transforms humble ingredients into extraordinary dishes. As he puts it: “No artsy flairs. Just really good food—well-presented, flavorful, and delicious.”

A gastronomic experience

Anvil marks a new chapter in Chef Boutwood’s culinary journey, with a focus on delivering unforgettable dining experiences. “I want Anvil to be a memorable experience,” says Boutwood. “It’s all about the flavors, the presentation, the service style, and the ambiance. All those elements together are what will make Anvil at Balmori a true ‘gastronomic’ experience.

A unique menu 

The menu will rotate weekly, drawing on Boutwood’s childhood and nostalgia. Each week brings new surprises, ensuring there's always something fresh to try. By the final week of the pop-up, guests will experience a culmination of dishes unlike anything previously offered at the Chef's Table.

Short Loin

Two standout items embody Anvil’s concept: the Mushroom Gratin, a comforting dish from Boutwood’s childhood, featuring mushrooms, white wine, and Comté cheese; and the Roast Chicken Inasal, served with corn and popped sorghum, a tribute to his father’s influence. Both dishes reflect Boutwood’s philosophy that great food doesn’t need to be complicated—just exceptionally well-executed.
