A new stall at <a href="https://www.instagram.com/thegridfoodmarket/" rel="noopener noreferrer" target="_blank">The Grid Food Market</a> is serving up something simple, satisfying, and very Spanish. Opened last March, <a href="https://www.instagram.com/labikini_mnl/" rel="noopener noreferrer" target="_blank">La Bikini</a> is the latest concept from Spanish chef Miguel Vecin, known for his work at<a href="https://www.instagram.com/barpintxos/" rel="noopener noreferrer" target="_blank"> Bar Pintxos</a> and <a href="https://www.instagram.com/txokoasador/" rel="noopener noreferrer" target="_blank">Txoko Asador</a>. It’s a grilled sandwich popular in Barcelona—basically Spain’s version of a panini. The classic version is made with jamón (Spanish ham) and cheese, pressed between slices of buttered bread and toasted until golden and crispy. The name comes from Sala Bikini, a Barcelona nightclub where it became popular in the 1950s.At La Bikini, the sandwiches are hot-pressed on a plancha and served in triangle-cut portions, staying true to the Barcelona style. There’s a Truffle Jamon Bikini, made with truffle cheese and jamón serrano for a richer bite. The Italian Bikini combines mortadella, salami, and provolone — hearty and bold. And diners can also enjoy occasional weekend specials, like the Raclette Bikini.Chef Miguel grew up eating these sandwiches and wanted to bring them to Manila in a way that felt both familiar and authentic. Their Patatas Bravas Chips are thin, crispy potato chips tossed with paprika and served with dip. Chef Miguel also brought his homemade sauces – like his Salsa Picante—to La Bikini, pairing it perfectly with the savory, cheesy sandwich.
