Chef Jereme Leung Is In Manila For The Emperor's Table
His stellar new menu is available until the end of September at China Blue
Chef Leung’s current stint, The Emperor’s Table, is exclusively available at the hotel’s award-winning fine dining Chinese restaurant, China Blue. Known for his innovative take on modern Chinese cuisine, Chef Leung’s previous appearances have set a high standard—and equally high expectations—for culinary excellence.
Chef Leung emphasized the unique aspects of China Blue, highlighting its distinctive space and dedicated team. He noted, “With China Blue by Jereme Leung, I felt that some of the most unique characteristics of this venue includes a great restaurant space with high ceilings, a great view of the Manila Bay sunset, plus a team of very dedicated professionals.”
Regarding the unique ingredients featured, the masterchef explained, “It is more a culinary exploration of [Executive Chinese Chef Eng Yew Khor] and myself working on identifying ingredients that is currently not common in the Philippine market, then introducing some of these ingredient elements that is of great quality while able to express a storyline in our menu creations.” He added, “We would never feature 'rare' or protected species ingredients for the sake of mother nature.”

For this one-of-a-kind menu, diners will experience a meticulously curated set meal featuring unique and hard-to-find ingredients found around Asia.
The meal started with a duo of appetizers of marinated seafood: Creamy Crabmeat with Avocado in Crispy Pastry Lantern and a King Prawn marinated in Sweet Plum Wine. The dish altogether was on the sweet side with hints of savory flavors from the fresh seafood.
The Kung Fu Soup with double-boiled Sturgeon Tendon and Dry Sea Conch with Morel Mushroom was perfect for the rainy weather, warming you up from within. The subtly flavorful broth beautifully brings all components together.
The first maid dish is the Wasabi Beef Wagyu, which was exquisitely tender and fell apart with the slightest prodding of the fork. The beautiful glaze gave it a deeply rich and savory flavor, while the crushed pistachios gave it a much needed change in texture. This is a must-try and I hope they keep it on China Blue’s menu for good.
Next is the golden Pan-fried Black Cod on an equally golden puddle of Torch Ginger Flower Sauce, a luscious “gravy” full of Asian goodness. The freshness of the sauce gave vibrancy to the cod, making each bite even more delightful than the last. Hoping this one makes it to China Blue’s permanent menu, too.
The Emperor’s Table meal ends with a gorgeous Chocolate Egg filled with creamy Coconut Mousse with a Mango Puree ‘Yolk’ in the center. The chocolate has a subtle bitterness that cuts through the richness of the mousse and the fruity sweetness of the mango ‘yolk’. There’s quite nothing like a masterfully executed dessert, and with this finalé, Chef Jereme Leung has proven why he’s earned the title of “masterchef”.
Chef Leung hopes diners will appreciate the effort to introduce diverse seasonal ingredients and enjoy the unique dining experience.
This exclusive dining event also offers a rare opportunity to interact with Chef Leung and delve into his culinary inspirations, which he will personally oversee until August 28th. The Emperor’s Table menu will be available for lunch and dinner services daily until September 30, 2024.
